nuggets and colorful bread

Its been awhile since we did anything food related!
When I told the kids that they were going to help make lunch they were PUMPED!
(we were slightly disappointed earlier because our slime that we made didn't turn out)
so being able to help with lunch put a smile on everyone face!

The recipe is from a blog I read and she called it
Chex Mix Chicken
it is a gluten free homemade chicken nugget!  
YUMMO!!!

Now I hear people say that you will see a change in your children if you cook differently
Well today my kids NEEDED change!
In their behavior and attitude
--or maybe it was me that needed change, but for now I blame the kids--

Honestly the daycare kiddos rock but today just wasn't our day
and I know changing their diet for a day will only make them poo more not actually listen :)

anyways back to gluten free chicken nuggets!

What you need:
Chicken -- cut into nuggets
crush up chex mix.  I used the gluten free kind...hence gluten free nuggets!
I also added a little pepper and a little garlic to give them some flavor.
You can add whatever flavors you would like
for example the hubs would LOVE it if I added red pepper for a little kick!
go crazy or stay simple!
break 2-3 eggs and give them a good whip!


then find a helper or 2, to dip in the egg, then roll on the chex mix!
They will think its gross and yucky but will smile and giggle the whole time!
place the nuggets on a cookie sheet covered in tinfoil and greased!
Bake at 400 degrees for 20mins!

After we made our gluten free nuggets and they were cooking away
we painted some bread!
Say what?!? 
Paint bread...
the kids were hesitant about this!
I promised them the bread would still be ok to eat because it was 
MILK PAINT!

What you need:
Milk
food coloring
NEW paint brushes
WHITE bread

here is the milk with some food coloring in it!
"painting" our bread
lots of colorful bread being created!
our YUMMY lunch!!  
Toasted colorful bread, gluten free chicken nuggets, and some fresh fruit!

Hopefully after nap I have a better attitude!!
and the kids have better behavior!

It's a Pizza Party

It's really not a party but the title works!

We did read 

If you are a fan of Curious George, 
which my kids are
this is a GREAT book!

Curious George gets invited to a pizza party and of course his curiosity gets him into a little bit of trouble!

So we decided to go along with our book we had to make our own pizza,
both real and pretend!!

For our pretend pizzas, 
we had
crust, sauce (red paint) pepperonis, sausage, mushrooms, green peppers, and cheese!

We then painted and glued everything together





After we made our pretend pizzas we made real pizza (grilled cheese pizza)

What you need:
2 pieces of bread (one side of each slice buttered)
sauce
cheese
whatever pizza ingredients you desire!




After the pizza then need to be toasted!

and here is the final product!
 the REAL pizza sandwiches
i did cut them out like hearts but its hard to see in the photo!
and the pretend pizza pies!!

I AM HUNGRY!

It has been awhile that I have shared an "I AM HUNGRY" post

This little post is what to do with leftovers!
We had my daughters birthday party this past weekend
and I made a ton of BBQs (sloppy joes, taverns...whatever you call them)
well I needed ways to use it up
by not serving BBQs each time...
soooo

I call these White Tacos!
-i think they might also be called easy enchiladas-
A daycare mom shared this recipe with me!

What you need:
1lb. browned hamburger
-1 package of taco seasoning
-soft shells -I use the medium sized ones--about 8
-1 package taco cheese (more if you LOVE cheese)
1 can cream of chicken 
1 can cream of mushroom
1 can milk


EASY
YUMMY
KID FRIENDLY
(minus the fact its a little messy)
-if a meal is easy, yummy, and kid friendly whats not to like!-

Now my meat is not taco flavored so i added a little taco sauce
 to give it more of a taco meat taste instead of a BBQ taste.
- it was still super yummy!

Brown your hamburger
add the taco seasoning
add about 1/4 bag of taco cheese to the meat

then put the meat mixture into the shell
(about 2 spoon fulls)


She was dipping in and taking small amounts on her spoon, so it took her about 4 dips to get about 2 spoon fulls!










Then fold the taco shell around the meat

place the shells in a baking dish that has been sprayed!

mix together the 2 cans of cream and I can of milk

poor over the the shells!
and top with cheese!!

Bake at 375 degrees for about 30mins or until bubbling hot!!

ENJOY!!!

I am Hungry -- Pizza Bites

Having a daycare lunch time can be crazy, when your trying to make lunch, and keep kids entertained. 
My challenge is that I do daycare in my basement and the kitchen is on the main floor.
Not all the kids are to be trusted alone :)

So today I had the kids help me make lunch!
We made pizza bites!

INGREDIENTS:
10 biscuits
20 chunks of mozzeralla cheese
(my chucnks are about 1/2 in. thick)
20 pepperonis
(i cut my pepperonis into quarters them seem to fit better into the biscuit that way)


Then cut the biscuits into half.  You will be making 20 pizza bites!
I love his face like this is a HUGE scissors and my crazy daycare provider is letting me use it!
He's 5...I trust him!
Next: Flatten the biscuit
after the biscuit has been flattend add 1 pepperoni - for us that meant 4 triangles-
and then one chunk of cheese.

after the pepperoni and cheese has been added, fold the dough over and pinch the seems.

Then put all the "bites" in a pie dish (im sure any dish will work but we used a pie dish)
sprinkle with garlic, and bake at 375 until golden brown

(this is before they are golden brown)

Serve them with a side of pizza sauce and ENJOY!!

Its easy, kid friendly and you could do so much with them!
I have made them with meatballs, pepperjack cheese, you could do veggies, just cheese, sausge, ect...

I am Hungry!

Another SUPER easy meal!
I call it BUBBLE PIZZA!
(remember the amounts of ingredients that i use are to feed an average of 10 kids)

Ingredients:
2 cans of pillsbury biscuits (10 in a can)
2 cups of cheese (more if you like lots of cheese)
1 jar of your favorite pizza/spaghetti sauce
-pizza ingerdients (whatever your favorites are, we keep it simple with pepperoni, and sausage)

Instructions:
In a large mixing bowl combine ALL ingredients EXCEPT 1 cup of cheese
- I like to tear each biscuit in half. 
Then i just mix everything together! 
Pour everything into a greased 9X13 pan
Throw in the oven for 20mins
Then after 20mins I add the rest of the cheese
Through it back into the oven for another 10mins or until golden brown
I don't have a finished picture because I had straving children!  But the pan was empty and I heard lots of mmmms, this is yummy, more please!

This is another simple meal that the whole crew LOVES and eats it all gone!
